Rhubarb is kind of a mysterious ingredient. Although it is commonly used like a fruit, it is actually a vegetable. It looks like pink celery with kale leaves at their ends which are inedible. It is very tart and sour so it is often mixed with sugar. So what does the rhubarb note actually smell like? It smells kind of like it tastes! It is tart and sharp and can be slightly sweet and fruity and pairs well with florals, green and citrus.
